Beachwood Pizza Honors Late Chef with Limited-Time Menu
UPDATE: Beachwood Pizza & Beer in Huntington Beach is set to honor the late Chef John Ash, recognized as the father of Wine Country cuisine, with a limited-time menu inspired by his iconic cookbook, “From Earth to Table.” The special menu launches on October 23 and runs through November 2, featuring three unique dishes that pay tribute to Ash’s legacy.
This initiative comes just weeks after Chef Ash passed away at the age of 83 in August. Known for championing sustainable cooking and local ingredients, Ash’s influence resonates deeply in the culinary community. Beachwood owner Gabriel Gordon expressed profound admiration, stating, “John was the godfather of Wine Country cuisine and a huge influence on me growing up in Santa Rosa.”
The exclusive menu includes the Earth To Table Sourdough Pizza, topped with Bechamel sauce, mozzarella, Dutch brie, Canadian bacon, portabella mushrooms, and caramelized onions, which Chef Ashley Arias describes as “like putting a charcuterie board on a pizza.”
Another standout dish is the wine-braised chicken Orecchiette, featuring creamy chicken, herbed Shiitake mushrooms, sun-dried tomatoes, and parmesan. Arias notes it is “super herbie, super savory,” making it a must-try for food enthusiasts.
The dessert, Spiced Wine Poached Pear, incorporates the white wine Ash frequently featured in his recipes. “It’s tender but still full of texture,” Arias said, emphasizing the dish’s delicate preparation.
